Qualified in picturesque Tasmania, Matt comes with a vast array of experience. He has honed his skills across Australia from the cold climes of Tasmania to the tropical oasis of Sheraton Mirage in Port Douglas. With his experience in cooking with fine foods you can be certain that Matt's passion for cooking will tempt you at all times. As your Chef on Wilson Island he ensures that you will look forward to each and every dining experience. Kat's interest for travel started at an early age moving around
Australia until finding her love of the outdoors in Tasmania's west coast
wilderness. There she immersed herself in ecotourism developed her skills
in guiding and leisure on the newly restored Abt railway system. Kat is
delighted to show of her latest 'home' and share with you the wonders of
Wilson Island. As your hosts, Matt and Kat are able to ensure you will relax and take in the magnificence of Wilson Island.

Introducing James Stanton and Bree McCullochDelighted in their ability to show you their slice of paradise, your Wilson Island hosts James and Bree, will encourage everyone to indulge in the beauty of the coral cay and the surrounding Great Barrier Reef whilst taking time to relax and savour fabulous food and wine. James has enjoyed working in the hospitality industry for 17 years, giving him extensive experience in many aspects of cooking. It all began in Adelaide, South Australia where he commenced his apprenticeship and moved his way around Adelaide's finest 5 star hotels, restaurants and cafes. James has also worked his way throughout Australia including Tasmania, Queensland and Western Australia where his family's Swan Valley restaurant is located. Overseas James worked in prestigious hotels and resorts where he learnt to cook local delicacies. His time was spent between the UK to the ski fields of Austria, France and Andorra to the holiday islands of Greece and Cyprus. For those lucky enough James may even bring out his guitar for a sing along. Bree's hospitality background began over 10 years ago in her family
owned hotel in Perth, Western Australia. She continued her hospitality
work whilst at University studying Public Relations before heading
overseas. Her wine and cocktail knowledge was enhanced through working in
wine bars and discotechas in Spain, Andorra and Cyprus. Fine dining
experience in Wales and London also adds to her knowledge of international
food and wine. As your hosts, James and Bree combine their array of skills and experience to bring you an island holiday they promise you will never forget.
